Great morning this morning, if you wake up every morning is a great morning!

We link up with Sara our Feisty Foodie in the last hour today, up in the wilds of Canada, well Ontario.

Sara’s recipe for today?

Lamb Spiedini  (Skinny lamb skewers)

 These make a great appetizer or serve as part of a grilled meat platter!

INGREDIENTS

Juice of 2 lemons (approx 5 tablespoons lemon juice)

1/4 cup olive oil

1 tablespoon chopped fresh rosemary or 1 1/2 teaspoons dried

1 teaspoon fresh parsley, chopped

2 teaspoons grated lemon zest

1 clove garlic, crushed

1 lb boneless sirloin lamb chops, cut into 1-inch pieces

Long wooden skewers

Salt & pepper

PREPARATION

  1. Prepare barbecue or grill (medium-high heat)
  2. Whisk lemon juice, olive oil, rosemary, garlic and grated lemon peel in glass pie dish to blend (set aside a small amount to brush lamb with). Sprinkle lamb with salt and pepper; add lamb to marinade and toss to coat. Let mixture stand 10-15 minutes, tossing occasionally.
  3. Thread lamb onto about 5-6 inches of your skewers leaving at least 5-6 inches on the bottle and an inch or so on top. Cook until desired doneness (medium rare or rare) for approximate 10-12 minutes, coating with additional marinade.

TIP:  Soak your wooden skewers in water for 5 minutes before threading

ALTERNATIVE:  Cut red onion, red pepper and yellow pepper into 1 inch pieces, and alternative meat and veggies on the skewers

Delicious served with garlic lemon roasted potatoes and a village Greek salad.  You can also serve these the Tzatziki recipe I posted a few weeks ago.
