It is that time of the week when I am joined by Yoly de Sedas. Yoly has the unenviable task of trying to make us all fit and healthy. Well I must admit that today she is off to a good start! Tater Tots, made from potato and broccoli together with spices and baked, don’t tell her I said that they were delicious. Not so sure about the Okinawa diet… purple potatoes please, is nothing sacred!
Here is the receipe for the Tater Tots:
Ingredients:
3 potatoes (boiled, no skin)
1 cup broccoli (boiled)1 pasture raised egg by or a vegan egg (1tbsp. flaxseed meal +2.5 tbsp water)
1/2 onion (chopped)
1 teaspoon coconut oil
1 tsp. Garlic Powder
1 tsp Turmeric Powder
1/2 cup Nutritional Yeast
1 pinch Cayenne Pepper
1/4 cup Italian Seasoning Mix (Dried Herbs)
1/4 cup milled flaxseeds
Procedure
In a bowl, mash together the potatoes and the broccoli until you have a consistent dough
Sautée the onions in the coconut oil until golden, then add to the potatoes and broccoli dough, mixing well.
In a separate bowl, mix the garlic powder, turmeric powder, nutritional yeast, cayenne pepper together.
In a second bowl, mix the italian seasoning with the milled flaxseeds to create the breading mixture. Set aside.
Mix the onions with the broccoli and potato dough until smooth. Add the powder mix to the onions, broccoli and potato. Add the egg to the mixture to add density.
Using the potato mixture, create small round tater tots. Pass them through the breading mixture, and place them on a baking sheet.
Bake for 40 minutes then turn them over. Bake for another 15 minutes[/vc_column_text][/vc_column][vc_column width=”1/2″][vc_column_text]News:
