You me and the music for the first couple of hours this morning. In the last hour today Sara is with us for her regular slot, as we are coming up for Christmas we take a look at some of Sara’s festive favorites.
Candy Cane-OREO Cookie truffles
39 regular Oreo cookies
1 (8 ounce) package cream cheese, at room temperature
3/4 teaspoon peppermint extract (optional) (you could also add crushed candy canes)
16 ounces semisweet chocolate, finely chopped (you could also use white chocolate)
1 tablespoon coconut oil or vegetable oil
2 regular-size candy canes, finely crushed
- Reserve 1 Tbsp. chopped candy. Mix remaining candy with cream cheese and cookie crumbs until blended.
- Shape into 48 (1-inch) balls. Freeze 10 min.
- Dip cookie balls in melted chocolate; place on waxed paper-covered rimmed baking sheet. Sprinkle with reserved candy.
- Refrigerate 1 hour or until firm
