Good to have Feisty Foodie Sara Solomon back with us for her regular slot. Today, as next Sunday is Fathers day Sara has some nice simple recipes that do not use many pots and pans so Dad does not have much washing up to do!
Here are a few easy “Muffin Tin” recipes that are sure to make your Father’s Day breakfast or brunch a little easier and super delicious!
French Toast Muffin Cups
- ½ cup whole milk
- ½ cup heavy cream
- 2 tbsp. granulated sugar
- 4 eggs
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- ¼ tsp. kosher sea salt
- 6 c. dried cubed bread (white, challah, brioche, croissants or cinnamon raisin), cut into 1 inch squares
TIP: Let the bread dry overnight, this will help it absorb more of the custard.
Directions
Preheat oven to 350 degrees. Spray a 12 cup muffin pan with cooking spray; set aside.
In a large bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon and salt.
Add the cubed bread into the mixture, toss gently to combine. Refrigerate 30-60 minutes, mixing half way through to make sure each piece is absorbing the custard. Scoop a ⅓ cup of the mixture into each well.
Place in the oven and bake for 25-30 minutes or until golden brown on top. Remove from the oven and allow to cool for 5 minutes before removing and serving.
