Tuesday means that we are back with Feisty Foodie Sara in the last hour. Today we have a fun and easy recipe that Sara has come up with, Minced Beef is always a good versatile basis for many a meal this is no exception..

Beef Taco Bowls with Basmati Rice and Lime Crema

Ingredients:

500g ground beef

2 tbsp Mexican seasoning

113 g corn, frozen

3 spring onions, white and light green parts thinly sliced

2 tbsp Cilantro, chopped

1 green pepper, 1/2 inch pieces

2 small Roma tomatoes, small dice

1 cup Monterey Jack, shredded

1 clove garlic, crushed

5 tbsp sour cream

1 lime, zest, juice and wedges

1 tbsp vegetable oil

Salt and Pepper

 

Description:

Prepare rice per the package instructions.

Meanwhile, make crema by mixing sour cream, lime zest, the juice of half a lime and salt and pepper, and set aside in the fridge.

Add oil to pan and sauté beef with the Mexican seasoning until browned and no pink pieces remain, approx. 5-6 minutes.  Once ready, set aside.

In the same pan, sauté the peppers, corn and garlic about 5-6 minutes until tender.

Fluff up the rice and add it to the corn mixture 1-2 minutes until mixed together.  Re-season with salt and pepper and add in spring onion.  Mix to incorporate.

Divide rice into 4 bowls and top with beef.  Sprinkle each bowl with shredded cheese and top with diced tomatoes, cilantro, lime crema and lime wedges.  Serve and enjoy!
