Tuesday 26th February 2019. Stand up comedy at Murphy’s and sneaky veggies with Sara.

Joining me in the second hour Tom from Murphy’s California Kitchen. Tonight they have their first stand up comedy night staring Fufo Caaparo and Nicky Malara. Fufo is also with us. So what is it like to be brave enough to be a stand up comedian?

Homemade Corn Chowder

 INGREDIENTS

  • Olive oil
  • 1 cup diced onion
  • 5 cups fresh corn (10 ears, with any milk collected when removed from the cob), frozen corn if fresh isn’t available
  • 3 cups chicken stock
  • 1⁄2 cup small diced red bell pepper
  • 1⁄2 teaspoon chopped dried rosemary
  • 1⁄2teaspoon dried thyme (optional)
  • 1⁄8 teaspoon ground black pepper
  • Cayenne pepper to taste
  • 1 tablespoon chopped fresh basil
  • Kosher salt to taste

DIRECTIONS

  1. Add olive oil to a pot, medium high heat
  2. Sauté the onion for about 5 minutes until translucent
  3. Add 3 cups of the corn and sauté for 4-5 minutes, until it softens a bit.
  4. Add 2 cups of chicken stock and cook until the corn can be mashed easily with a fork, about 20 minutes
  5. Put everything in the pot into a blender and puree until smooth
  6. Pour the puree back into the pot heat on medium-low
  7. Add the bell pepper, rosemary, thyme, black pepper, cayenne pepper and the remaining 1 cup chicken stock and 2 cups corn.
  8. Stir and cook for about 10 minutes, until the chowder is thick and creamy.
  9. Top with basil.
